If you struggle with quick but healthy options for breakfast, you’ll enjoy this recipe. You make it the night before and let it sit in the refrigerator over night. Don’t forget to use a metal pan (as opposed to glass) so you can go straight from the fridge to the oven.
- 1/2 cup oil
- 3/4 cup sugar (white, brown, or honey)
- 2 eggs
- 1 cup milk
- 1 Tablespoon baking powder
- 3 cups rolled oats
- Optional: Raisins, chocolate chips, shredded coconut, etc.
Beat together oil and sugar/honey. Mix in eggs, milk, baking powder and oatmeal. Beat well, stir in optional ingredients. Pour into a lightly greased pan. Refrigerate overnight.
Cook at 350 degrees for 35-40 minutes.
